We have been eating a lot of salsa lately. It's easy to make and my recipe makes quite a bit. After some trial and error, I think I have a pretty good recipe.
Here it is:
1 can of crushed tomatoes
1 can of original Rotel (drained)
3 medium size slicing tomatoes -or- 5 roma tomatoes
1/3 (more or less) of a small onion
1/2 tsp. minced garlic (we buy the kind in a jar)
Cilantro- I buy 1 bunch and use the leaves off of about 1/2 of the stems

I put all of the ingredients in a food processor and run it until it is the consistency I like.
This could probably be made in a blender too.
Also, this recipe can easily be modified if you like your salsa more garlicky, less garlicky, saltier, etc.
